Rava Idli is a quicker version of the traditional idli — made from semolina (rava) instead of rice batter, studded with cashews, curry leaves and mustard seeds. Soft, fluffy and ready in minutes. A Bangalore invention attributed to MTR, now a beloved staple across South India. Served with coconut chutney and sambar.

Rava Idli was born during World War II when rice was scarce — MTR restaurant in Bangalore invented it using semolina. Today it is a national favourite.
