Payasam is the divine sweet of South Indian temples and Brahmin households. Our rice payasam is made with full-fat milk simmered for hours with rice until it reaches a creamy, thick consistency, then sweetened with sugar and flavoured with cardamom and saffron. Garnished with fried cashews and raisins.
