Pudi Idli (also written Podi Idli) is one of South India's smartest food inventions: a soft idli broken into bite-sized chunks, tossed in **idli pudi** (a dry spice-and-dal powder), and served as a small plate with chutney on the side.

The pudi (powder) is a roasted blend of:

Urad dal

Chana dal

Dry red chilli

Asafoetida (hing)

Sesame seeds (sometimes)

Curry leaves
